It’s Simple Saturday and this breakfast is about as simple as it gets! I made this for my husband and I to reward us for getting up early on a Saturday. The kids are all still asleep, which is good, because it means we don’t have to share!
Usually I make this for myself, but since I was making some for my husband too, I doubled the recipe.
I’m usually a “cold cereal for breakfast” kind of mom, so when I took this plate to my husband this morning, I could tell he was probably thinking, “Who are you, and what have you done with my wife??”
It’s still a super simple breakfast, but at our house…SIMPLE works!
Cheesy Green Chili Egg Scramble

Ingredients
- 1 TBSP Butter
- 2 Eggs
- 1 TBSP (or more) of Diced Green Chilies
- ¼ cup shredded Monterey Jack Cheese
- Salt to taste
Instructions
- Melt Butter in medium skillet. Add eggs, salt and green chilies. Cook halfway, then add cheese. Finish cooking. Add extra cheese on top (if you really want!) Enjoy with your favorite fruit!
