Ok- so about a year ago I was at my sister’s house and she pulled out some chips and salsa for us to snack on.  But, these were no ordinary chips.  They were a multi-grain chip- which honestly sounds about as appetizing to me as a piece of sandpaper.  But, I didn’t want to offend my sister so I partook anyway.  I was completely blown away by the deliciousness that I experienced with a mouth full of multi-grain and salsa!  I asked her where she found these chips and she said Costco- which was a bummer because I don’t live close to a Costco and I don’t have a Costco card.  So, to feed my craving my sweet sister picks up a bag of these chips for me every time she goes to Costco.  The brand name is Food Should Taste Good– and I couldn’t agree more.  You will have no idea that you are eating flax seed and Quinoa, but you will get all the health benefits. (-:

They are delicious with your favorite salsa or with this yummy Creamy Corn Jalapeno dip pictured here!  Give them a try!

Yield:2 cups

Ingredients:

4 ears of corn, husks removed
1 red bell pepper, diced
1/2 bunch green onions, sliced
2 jalapenos, minced
1 small can green chilis
1/2 cup sour cream
1 teaspoon salt
juice of 1 lime
freshly cracker pepper

Directions:

Bring of pot of salted water to a boil. When boiling, add the corn and cook for 5 minutes. Remove the corn and let cool. Cut off the kernels from the corn and reserve for salsa. While corn is cooking, prep all other ingredients. Mix all ingredients together and adjust lime, salt and pepper to taste. Serve with Food Should Taste Good™ Multigrain, Jalapeno, or Lime tortilla chips.  

 

Food Should Taste Good let me try a variety of some of their other chip flavors and I was impressed with every one. Like these oh, so festive Harvest Pumpkin chips!  Try them with your favorite creamy cheese topped with a cranberry compote.  You won’t be disappointed and neither will your guests.

Cranberry_Compote_for_Dipping_HP_Cropped

1 Tbsp. Olive Oil

1 medium onion chopped (1/2 cup)

2 cups fresh or frozen cranberries

1/4 cup packed brown sugar

1/4 tsp. ground cinammon

1/2 cup water

1/4 tsp. salt

1 tsp. red wine vinegar

8 oz. of desired cheese (cream cheese, goat cheese, etc.)

In a 1-quart saucepan, heat oil over medium heat.  Add onion.  Cook about 2 minutes or until soft. Add cranberries, brown sugar, cinnamon, and water.  cook 8-10 minutes or until cranberries have started to pop. Stir in salt and vinegar; cool slightly.

Place cheese on desired serving platter and pour compote over the cheese. Serve with chips.

Or they are delicious with this Pineapple Chipotle Salsa!

Yield: 2 cups
Serving Size: 1/4 cup

Ingredients:

1 cupdiced fresh pineapple
1/4 cup finely chopped red onion
1/2 cup chopped roasted red bell pepper (from a jar)
1 chipotle chile in adobo sauce, finely chopped
1/4 cup chopped fresh cilantro leaves
1 tablespoon fresh lime juice
1 tablespoon honey
1 teaspoon freshly grated gingerroot
1/4 teaspoon salt
Food Should Taste Good™ pumpkin chips, as desired

Directions:

1. In large bowl, mix all ingredients except chips. 
2. Cover and refrigerate until needed; serve with Food Should Tate Good™ Harvest Pumpkin or Sweet Potato chips.

Their Blue Corn Tortilla Chips are awesome with this easy, but tasty Buffalo Chicken Dip!

Buffalo-Chicken-Dip

Yield: 4 cups
Serving Size: 6-8 people

Ingredients:

2large chicken breasts
Salt and pepper to taste
1 – 8oz package cream cheese, softened
¾ cup hot sauce
8oz shredded mozzarella cheese

Directions:

Preheat oven to 375°F. Season chicken breasts with salt and pepper and grill until the internal temperature is 165°F. Remove chicken from grill, let cool, dice small and add to a large mixing bowl. Add remaining ingredients. Using a rubber spatula, gently fold ingredients together until well combined. Transfer mixture to a baking dish and place in oven. Stir mixture periodically. Bake until hot all the way through, about 15 to 20 minutes. Serve with Food Should Taste Good™ Jalapeno or Blue Corn Tortilla Chips.

They are also great with the Avocado Hummus Dip– who doesn’t love avocado?

Avocado-Hummus

Serving Size: 6 people Ingredients:

16 ozcan garbanzo beans
1 avocado, peeled and coursely chopped
1 clove garlic
1/4 cup olive oil
1 lime (for garnish)
salt to taste

Directions:

Place garbanzo beans, avocado and garlic in a blender or food processor. Add the olive oil a little at a time, until the hummus is well pureed. Add more olive oil, if needed, by the tablespoon to get the consistency just right. Salt to taste. Serve with Food Should Taste Good™ Lime, Multigrain or Blue Corn Tortilla Chips.

The Sweet Potato Chips were so good they didn’t last long enough to make it into a dip honestly, but they would be great with a classic Ranch dip with cottage cheese added to it for a little texture.  Delish!
